Pandemic Baking: Pumpkin Pie Bars


Rating: B-

Commentary: All the flavors are good but the texture is weird to me. (Skipped the icing and cut back on the sugar.) The crust is very crumbly (note mine was both dairy and gluten free though!) and, while I love both gingerbread and pumpkin pie, they're a bit peculiar together.  I'm sure it's even better with cream cheese in the filling. Maybe a real pie crust next time.

This will not prevent us from eating the rest for breakfast.
