Because it's my birthday and I wants it.

Leave me a comment? What's your favorite cake? (We are in a chocolate rut.)

(For my birthday this year, I am dragging my students through yet another thrilling lab, then watching another one year old for five hours. Parenthood is so glamorous.)

    Happy birthday! Pea loves pineapple upside down cake. I am a giant fan of carrot cake and red velvet cake, but I usually omit the colouring because good lord that's a lot of colouring, so it's not so far off from chocolate.

    1. I haven't made pineapple cake in years! I should! (There was an unfortunate incident with an iron skillet and a cake that tasted strongly of garlic.)

  2. Aww, happy birthday! I wish it got to be a more luxurious day for you. Perhaps you'll celebrate later? My favorite cake is carrot with cream cheese icing and a little icing carrot on top. Our other go-to cake is a coconut cake with caramel rum sauce. Alas, filled with things you're allergic to.

    1. MMMMM now I want a coconut cake. (I've made a successful coconut milk caramel sauce before!) I'll have to make it some day when Dr. S is out of town, as the only food he hates is shredded coconut.

    Happy birthday! My mom makes red velvet tuxedo cake - basically red velvet cake with a cheesecake as the middle layer between two red velvet cake layers. Delicious and so so rich!

    Yellow cake with chocolate icing is my favorite. My husband loves a chocolate chip bundt cake that is super easy to make. It uses German chocolate cake mix with chocolate pudding and sour cream in the mix. Serve with the whipped cream of your choice. I like cool whip but everyone else prefers Rediwhip.

    We usually make spice cake for birthdays. It's my favorite, except for Betty Crocker Funfetti, the cake of my childhood, which I cannot get in Europe. (sad face). Luckily, all three of us like it, and it's an easy recipe, so that goes over well whenever I need to whip up a cake.

    However, my husband ALSO likes carrot cake, and for his birthday last Friday Gwen and I made one on Saturday. It's a good thing his birthday only comes once a year, because I hate grating carrots.

  6. The One True Birthday Cake in my life has been my mother's extra rich fruit cake, iced with marzipan and royal icing (think English Christmas Cake I guess). Plenty of brandy to feed it with before eating too. Happy Birthday!

    Here goes again! Happy Birthday to you and to the other Dr. Scientist in the house! (And I now have no idea what kind of cake I suggested, but possibly Tarte Tatin, if that counts as cake. It might have some wheat-free/dairy-free potential, although it is nice with some creme anglaise on top)

  9. All time fave- Lithuanian Coffee Cake from Claire's Corner Copia. Don't get it often since it's a 2 hour drive. I've tried making it myself, but it's not the same.

    1. I always forget you also went to Snooty U! I've just discovered 'butter emulsion' and I suspect it's a factor in bakery deliciousness. Will report back once I buy some!

  10. Happy Birthday! I don't have a favorite cake, but this year I'm going to request a princess cake (which has custard and soaked sponge cake and raspberries and is covered in marzipan). DH almost always requests pineapple upside-down cake and DC1 usually wants something with strawberries, though this year he wanted red velvet.

    I think you could adapt it to make you not dead. Use your favorite butter substitute, and gluten-free flour mix, etc.

    1. I haven't made those in years! Rice flour works well, it's mostly chocolate anyways. Dr. S only ever wants chocolate cake!

    I really like whole orange almond cake (where you boil up & process oranges) served with Greek yoghurt. Or hummingbird cake with passion fruit frosting.

    Happy belated birthday! My go-to cake has become fruit-of-the-season streusel. Yeast base, favorite/available fruit, and streusel with cinnamon. Easy enough to make, can feed the whole family or lab if necessary, and still good, possibly better, on days 2 or 3 (it never lasts longer than that). With cream for guests and with yogurt for breakfast. But it's probably full of ingredients you're allergic to :o
